August Peach Pride

As much as I like a good apple crumble in the fall, I am also fond of peach cobblers during the warmer months. It's such an easy desert to put together and it's a real crowd pleaser. I like the taste of the sweet peaches combined with the crisp crust, it's so scrumptious! I am all about the fruit in a desert, which is why I prefer to have less batter in order to really taste the juicy peaches. Here is my easy recipe:


3/4 cup of all-purpose flour
1/2 cup of brown sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
3 tablespoons of butter, melted
1/2 cup of almond milk (you can also use whole milk if you prefer)
1/2 teaspoon of vanilla extract (not vanilla essence)
1/2 teaspoon of cinnamon
2 cups of peeled and sliced ripped peaches (make an "X" on bottom on your peaches, blanch them in boiling water for 1 minute and quickly remove them in iced water)


Pre-heat oven at 375F.

Melt the butter in a baking dish (8-inch square is ideal for this recipe). Distribute the sliced peaches evenly in the baking dish. In a mixing bowl, combine the flour, sugar, baking powder, salt and stir well. Next, add the milk, vanilla extract, cinnamon and mix thoroughly. Pour the mixture over the peaches. Bake in the center of your oven for about 30-35 minutes, or until the peach cobbler is golden brown. You can also insert a toothpick in the middle to check if it comes clean.

Serve warm with the best vanilla beans ice cream you can find and indulge!
